I have to agree with Herondalesforever. Here's my opinion on this:
Drinking the angel blood did not mean that he now has angel blood (not exactly). Like Herondalesforever said, it just made him a Daylighter. Yes, yes, he did get blood from Jace. I don't know how exactly it affected his own blood or physiology to turn him into a Daylighter (if it laced his blood with angelic energy or completely changed it or whatnot), but I certainly don't believe that would have made him part angel. Otherwise, I'd think he wouldn't be a vampire anymore.
Also, regarding another point raised in this thread: Vampires are not half-human half-demon; they are humans who became vampires, and this doesn't count as two "breeds".
What Simon is right now is just a vampire, who happens to be a Daylighter (because of Jace's blood, which again, did not make him part angel). Not a human-demon-vampire-angel.
I don't know if Jace's blood has left his system, but either way, blood does not make a person into something else (just like how Jonathan isn't half-demon because of his blood; he's a Shadowhunter WITH demon blood which in turn affected him, like how the angel blood affected Simon, that's all).
If you believe that Simon drinking Jace's blood made him part angel, do you also believe that biting a werewolf would make him part werewolf too? (In case anyone misunderstands, I don't believe this last bit; I'm only stating it as an example.)
